Let Them Eat Cake

I love citrus… it is sweet, tart, and juicy!

When creating this batch of cupcakes I added both lemon and orange juice to the batter and to the buttercream icing and eliminated the vanilla. I also added some lemon and orange rind to the batter as well. The cupcake was a bit denser than the standard vanilla cupcake but it was still a wonderful texture and the citrus flavour gave the cupcake just the attitude it needed!

The swirl of icing was my first time piping with the large star tip and I am pretty happy with the results! This is definitely a favourite cupcake of mine!
