These cupcakes were definitely worth the work involved!
Once again I used my favourite vanilla cupcake recipe. I took some fresh pineapple and created a warm and gooey filling for each cupcake and topped them with coconut buttercream icing. The result was the perfect pina colada cupcake! Topping these with an umbrella was really the only way to go!
