Let Them Eat Cake

I recently purchased some mini cupcake baking trays and I had the opportunity to try them out this week. I decided to cut my standard vanilla cupcake recipe in half but I kept the butter so that these would be extra rich little bites of heaven!

Topped with buttercream icing and colourful sprinkles these minis were a hit with my husband and my coworkers! I really loved the look of the white cupcake in the pink stripe baking cups…. warning objects in photo are much bigger than in reality!
